UNITED STATES. Semi-Firm. This bourbon-bathed beauty is made by Satori Cheese out of Wisconsin. It tastes like a cross between Cheddar and Parmigiano-Reggiano, with a crumbly exterior and a complex flavor profile revealing creamy, nutty notes. It's then washed in Kentucky bourbon, infusing a sweet and smoky woodiness on the outside with a strong, milky saltiness on the inside. After the bourbon shower, the cheese is aged for five months until peak flavor is reached.

FRANCE. An ooey-gooey wonder sure to please any crowd, with a creamy paste that threatens to run free of its annatto-tinged rind. Luscious and silky enough for brie-lovers, sheepy and full-flavored enough for the most adventurous palate, its bright orange rind refuses to be ignored, but its delicate sweetness balances the buttery intensity with aplomb. Made in Lyon, France, of pure pasteurized sheep milk, richer and creamier than cow's milk, Brebirousse (literally: red sheep) is everything we could want in a cheese: savory, creamy, nutty and complex.

Made in the Basque country and the Bearn region of France's Pyrenees Mountains, this small-scale pasteurized cheese is produced from floral sheep milk and given a half year to deepen in flavor. The ivory paste is firm but smooth with toothsome butterfat. With sweet, nearly caramelly, grassy, and nutty undertones.

ITALY. Soft. This iconic Italian softie has assumed a defining role in the pungent washed rind family. Made in the northern Valsassina foothills since the 9th century, one bite of the meaty, nutty, fruity interior and you'll understand its millennial appeal. The squares of pasteurized cow's milk are washed with a brine to foster a sticky, orange edible rind while air pumped from the original caves causes a dappling of soft and earthy tasting grey mold .

ITALY. Firm. A wheel, stone grey and mottled with white and tan, embodies this goat's milk name and rustic origins. Break past this rocky rind to inhale, and the scent of cool, wet stone engulfs the senses, with a hint of goaty tartness just below the surface. A dense, ivory paste is the tiniest bit sweet, and has a biting acidity and piquancy that is enhanced towards the rind. Creamy, with a noted aged taste that results in a earthy, rustic flavor, the Rusticapra stands out among its aged goat's milk relatives.

ITALY. Hard. A distinctive buttery aroma hints at the barrage of nutty sweetness and spice followed by a salt-caramel finish. We're quite sure that this cheese is made from raw, partially skimmed milk in Parma - thanks to strict D.O.P regulations. We choose 24 month wheels; any younger and we miss the intensity, any older and the salt and sandy texture overwhelms. Those white specks there are clusters of amino acids. They reflect proper aging and create a delightful crunchy texture.
