Having experimented with other ways of decreasing our cooking time, we experienced a decrease in quality. Our BBQ beef is from the brisket of the cow. It is smoked using the same methods and times as pork shoulder. It is then chopped more coarsely than the pork. Although tender, beef is not as tender as the pork. Like the pork, it is served with one oz. of BBQ sauce (2 oz. at dinner). Essentially a good ole down home apple turnover. We take some of our fresh biscuit dough, roll it out, and fill with apple pie filling. Then we deep fat fry in 100% vegetable oil until golden brown.
